ABC Coffee Roasters is a chain of premium cafes. Today our company has more than10 cafes, 2 central kitchens and 2 roasteries in 2 countries.We plan to become the most recognizable brand in Dubai and we are looking for a person for the position of an Operational Head Chef/Sous Chef - who is ready to achieve this goal together with our young team of enthusiasts. Today ABC - 3 locations in Dubai, central kitchen and 2 pre openings (Dubai, Abu Dhabi) and we currently seeking an Operational Head Chef/Sous Chef for our Culinary team. Primary Duties and Responsibilities: Menu development and implementation: Design innovative, high-quality menus that reflect current culinary trends and seasonal ingredients, with a focus on locally sourced and sustainable products. Culinary team management: Lead, train, hire and motivate kitchen staff to achieve high performance, conducting regular training sessions on best practices and safety protocols. Kitchen operations oversight: Supervise daily kitchen activities, ensuring efficiency, productivity and seamless coordination between the kitchen and service teams. Quality control and standards: Maintain the highest standards of food preparation and presentation, controlling portioning, plating standards and stock rotation. Inventory and equipment management: Manage inventory of ingredients, supplies, and equipment, ensuring proper use and maintenance of all kitchen equipment and coordinating timely repairs. Compliance with regulations: Ensure adherence to all health and safety regulations, including food handling and sanitation standards, conducting regular inspections and enforcing cleaning routines. Financial management: Monitor and control costs related to culinary operations, ensuring budget adherence, managing food cost percentages and implementing measures to reduce waste and improve efficiency. Pastry and bakery department management: quality control, work coordination of Head Baker. Collaboration and reporting: Collaborate with restaurant management to plan and execute successful dining experiences, provide regular updates to the Brand Chef on culinary operations and participate in departmental meetings. About You: A minimum of 5 years of experience in a similar role within the Operational/Cloud kitchen/Main Production Kitchen or luxury hospitality industry. Bachelor degree, Certified Culinary Arts Diploma Strongly committed to teamwork and customer service Eye for detail to achieve operational excellence Proven experience in managing Breakfast/Lunch Full time level restaurants. Strong ability to work with brand partners to create collaborative culinary experiences. Experience in managing large teams and overseeing culinary operations for high-end dining establishments. This role is crucial for delivering exceptional culinary experiences at ABC Coffee Roasters, ensuring that all fine dining operations are supported by top-tier food and service.
