Обязанности:
Responsibilities: To drive the F&B department while ensuring sustainable and profitable operations; To determine the main directions of operation of the department, to organize processes of the personnel managment; To ensure that all Operational standards are fulfilled for each and every guest during the service, work is done the correct standards and methods of service, stated in the Department’s Standard Operating Procedure Manual; To keep abreast of the F&B promotions, new menu items, daily specials, and other relevant information for the outlet guests; To lead an effective service team including recruiting, training and development, supervision and performance managment in order to ensure clients' satisfaction and adherence to service standards (SOP, Manual); prepare staff schedule and job descriptions according to structure and outlet operation; To control usage of all F&B items and appropriate usage of equipment, tools and service equipment; To ensure that prices and portions are offered in accordance to F&B profit objectives; To make F&B reports; To ensure that the monthly forecasted F&B revenue figures and archived; To maximize profitability by increasing turnover (revenue and covers) and controlling costs; To assist in te preparation of the annual budget and the manning guide and monitor them throughout the year to ensure we are in line; prepare the schedules accordingly whilst controlling labor costs and overtime payment; To liaise with Cost Control to orginize inventory. Requirements: University degree, preferably in the Hotel or Restaurant industry; Three years experience in position of Assistant F&B Manager / F&B Manager / F&B Director or two years in same capacity in a restaurant of 5 star hotels; Knowledge of all F&B items offered, including ingredients, methods of preparation and proper service; Expert knowledge of wines and spirits; Customer service orientation; Teamwork/co-operation; Flexibility, initiative, hospitality; Excellent communication skills; Good knowledge of MS Office, Opera PMS and Micros.
